I have known for over 20 years that I can’t eat gluten. I know that dairy protein is evil, but who doesn’t love a little cheese now and again, right? However, my little ‘slip’ on eating cheese last Thanksgiving was near fatal for me. My body likes to attack itself when casein or gluten proteins show up to the party, so when I got COVID in December, the damage was epic!
I was recently diagnosed properly with celiac disease, and casein (the main protein found in dairy) is a big NO-NO for the celiac in addition to gluten (the protein found in wheat). Our body cannot break down the proteins found in dairy or wheat.
Protein digestibility in the gut is so important, and if the gut microbiome is off, or if you have an allergy or intolerance and fail to properly digest It can become a real problem. Some of the symptoms could include:

Now to the REAL nuts and bolts… how do you go gluten-free, dairy-free, sugar-free? Gluten, dairy, and sugar is in just about everything, so it’s important to pay attention. Start by gradually swapping out the obvious foods in your home for friendly alternatives. Have fun at the store trying different things to find what works best for you.
Read your labels and look for hidden gluten ingredients like natural flavors or maltodextrin as well as obvious sources of gluten like wheat. Check for an allergen statement, and if you’re really trying to be careful look for the official gluten-free label.
Carbs are the easiest foods to swap out for gluten-free alternatives, but some foods can be sneaky! Did you know that soy sauce is fermented wheat and is a concentrated form of MSG (monosodium glutamate)? Try a wheat-free tamari, or Bragg’s Coconut Aminos instead. Both options are just as tasty!
If you really want to lose weight and heal your body quit it now with the cow milk products! Cow milk was meant to grow a 1375lb calf, not to nourish a healthy human. Not to mention the casein protein in milk has been shown over and over 100% to grow and metastasize cancer cells.
There are so many other tasty alternatives out there now! I love Miyoko’s cashew cheese products (found at Whole Foods, Sprouts, Target, and more) and oat milk is my new favorite milk alternative. Be sure and get the unsweetened versions to avoid the extra calories and sugar. There’s coconut, almond, cashew, hemp, and even blends you can try! I use the oat milk as a creamer sub for my coffee, and it works great! I add in a little coconut sugar and BOOM! My coffee is exactly how I like it without dairy and sugar.
I know the gluten-free, dairy-free lifestyle is bad enough, but if we are talking about PCOS, ADD, RA, joint and body soreness, skin issues, dental issues, and too many other things to list, we are talking sugar addiction. That craving you can’t overcome is probably bad gut bugs begging you to be fed. Safe alternatives include stevia, monk fruit, coconut sugar, honey, just to name a few.
